Po-tay-to, Po-tah-to

This is my first love and true addiction, way before I discovered sushi. I love potatoes and will eat them in any form, mickey d’s french fries, mashed, roasted, baked, hash browns and my personal favorite ‘slap chips’ and I love that lazy hazy feeling you get after having potatoes. There is actually a scientific reason for that and it’s called serotonin.

Potato creates an insulin response that affects the movement of the amino acid tryptophan from your blood into your brain. Your body uses tryptophan to make serotonin, the brain chemical that makes you feel mellow and happy. Serotonin also helps you to “just say no” to sweets and other things by putting
the brakes on your impulsivity –

So go ahead and have some carbs without feeling guilty, everything in moderation of course.
